12 Cakes 12 Months: #4 Carrot Cake / Ciasto Marchewkowe



Last month I decided to make a classic carrot cake by Aldi. It was not the first carrot cake I made but I had never used a cake mix before. Encouraged by the info on the box: 'Real Carrots and Raisins', I decided to give Baker's Corner a try (and make my life easier using the cake mix). There was no problem with making and baking the carrot cake. Following the the manufacturers instructions, I just added some oil, water and eggs. Then baked it using a springform cake pan.
I decorated it with cream cheese frosting (the recipe by the Southern Lady found here).
The results were great! The cake tasted as if it all (not only the frosting) had been made from a scratch. Fluffy and very tasty!

W kwietniu postanowilam ułatwić sobie życie robiąc ciasto 'z pudełka'. Wczesniej robiłam już ciasto marchewkowe (jest to jedno z ulubionych ciast mojego męża), ale nigdy dotąd nie wykorzystałam do pieczenia ciasta w proszku. Do zakupu tego produktu (w sklepie Aldi) zachęciła mnie informacja na opakowaniu 'prawdziwe marchewki i rodzynki'. Pomyslałam: 'może warto wypróbować'.

Zarówno z przygotowaniem ciasta, jak i pieczeniem nie było problemu. Stosując się do instrukcji producenta, dodałam do proszku trochę oleju, wody i jajka. Wymieszałam wszystko łyżką i przelałam do dużej tortownicy. Potem tortownica do nagrzanego piekarnika i już! No, prawie już - czas pieczenia wyniósł około 50 minut.
Krem do ciasta marchewkowego (widocznego na zdjęciu) zrobiłam sama, według tradycyjnego przepisu Southern Lady.
    Wszystkie składniki należy wymieszać mikserem do uzyskania jednolitej masy.

    Kiedy ciasto ostygło, przekroiłam je na dwie częsci (dwa krążki) i posmarowalam przygotowanym kremem.
    Efekt był rewelacyjny. Nikt by nie powiedział, że to ciasto 'z pudełka'. Puszyste i bardzo smaczne!
    Kiedy ów carrot cake Mix znów pojawi sie na półkach sklepu Aldi, nie omieszkam kupić ze dwa opakowania. naprawdę warto.


    Dla osób zainteresowanych zrobieniem ciasta marchwkowego, polecam przepis, który wypróbowałam kilkakrotnie. Na dużą tortownicę trzeba podwoić ilosć składników podanych tutaj.

    Inną opcją do wypróbowania jest przepis na tradycyjne ciasto marchewkowe podanego przez Southern Lady.

    12 Cakes 12 Months: #1 Crescent Cherry Cheesecake


    Here is my first entry on my 2016 cake project challenge. The first cake I made a couple of days ago was crescent cherry cheesecake - you can find the recipe here. When my husband tasted it for the first time, he said 'Real treat'. We like all cherry pie filling based cakes and pies so we enjoyed the  cheesecake too. However, the best and the tastiest part of it was the topping made of oatmeal, brown sugar, pecans and milk and powdered sugar glaze. The crescent rolls bottom and the cheese were not that good. Maybe a reason was that I used vanilla extract instead of almond (did not have almond extract). Anyway, next time, if when I make this kind of cherry cheesecake again, I will try to modify it a bit. Maybe I will use the pie crust layer, not the crescent rolls.

    Widoczny na zdjęciu sernik z wiśniami to moje pierwsze podejście projektowe z serii 12 Ciast 12 Miesięcy. Przepis znalazłam tutaj. Sernik był bardzo smaczny, szczególnie jego górna warstwa: mieszanina płatków owsianych, brązowego cukru, orzechów pekanowca i polewy na bazie cukru pudru i mleka. Dolna część stanowiła słabszy punkt wypieku. Może przyczyną tego była fakt, że zamiast olejku migdałowego (okazało się, że nie mam - 'wyszedł') użyłam waniliowego, a może spód z cienkiego ciasta (gotowe - do kupienia w tutejszych sklepach) na rogaliki niezbyt się sprawdził.

    Następnym razem spróbuję ten sernik trochę zmodyfikować. Może kruche ciasto na spodzie będzie smaczniejsze.

    Excellent Cheesecake - recipe

    I made this cheesecake for Thanksgiving. I used only a half of each ingredient (baking time was shorter: 25 min.) that was why it came out a bit flat, as I did not have a smaller cake tin. But the cheesecake was quite tasty, which was confirmed by the fact that it disappeared quite quickly. It is different from most of the cheesecakes - it has no crust base.



    Yield: 1.8 kg

    Ingredients:
    Cream cheese: 1kg (or 4 packages of 8 oz cream cheese)
    Eggs: 8
    Powdered sugar: 2 cups
    Unsalted Butter - softened: 25 dag (or two sticks)
    Cream of Wheat: (kasza manna) 2 TBS
    Potato flour (or cornstarch):  1 TBS
    Baking powder: 2 tsp
    Lemon extract: 1/3 tsp
    Raisins: 10 dag (2/3 cup) - soak them in hot (but not boiling) water for a while - then drain well on a sieve or strainer

    Procedure:
    • Heat oven to 340 F/170 C.
    • Prepare a round baking tin ( mine is 10.5"x3"): grease it lightly and sprinkle with plain bread crumbs, including its sides.
    • Mix the cheese, butter and part of the sugar. 
    • Separate the egg yolks from the whites.  
    • Mix the rest of the sugar with the egg yolks (till the mixture changes its color and becomes whitish. Mix the cream of wheat, potato flour/cornstarch and baking powder in a separate dish. 
    • Add the dry ingredients to the cheese/sugar mixture and blend it all well. 
    • Add the lemon extract + the drained raisins - mix it all again (not too long) . 
    • Beat the egg whites (in a big bowl) with a whisker till they turn into a stiff foam. 
    • Add the egg white foam to the rest of the ingredients - mix everything delicately with a spoon (do not use a  blender now!).
    • Pour it all into your cake tin.
    • Bake the cheesecake for about 50 minutes or until a toothpick comes out clean. The cheesecake should be light brown then (not too dark). Do not over-bake.

    Most often this kind of cheesecake tends to 'sit' after taking it out of the oven - it will get flatter - do not worry about it, it's normal. That is why the sides of the tin should be greased and covered with  bread crumbs (see the beginning of the procedure) to let the cake 'sit' evenly.
